The perfect meal for when you're feeling ill

Almost everybody loves chicken soup, its tasty, nutritious, cheap & easy to make. Plus it's supposed to make you feel better when you're ill in bed.

So here's my recipie for chicken soup, it should be enough for 6 people, that's a lot I know but you can always keep some for the next day to reheat:

You'll need:
1 chicken flavour stock
1lb (450g) of cooked chicken
2 carrots
2 onions
1 stick of celery
A tin of chopped tomatoes
300g of tinned potatoes
Half a tablespoon of parsley
One garlic clove
2oz (55g) of butter
2oz (55g) of plain flour

Now the fun bit:
Start by taking the cooked chicken, celery, carrots & tinned potaotes and cutting them up into little pieces.
Take the onion and chop it into small pieces.
Dice up the garlic into very small pieces.
Chop the parsley up, including the stems into small pieces.

Put the butter into a large saucepan until it melts.
Then add the carrots, onion, potatoes & celery and stir them in until they start to soften.
Stir in the flour a little bit at a time, this will add a thickness to your soup and stop it from being watery.
Allow the flour and other ingredients in the pan to cook for 2 minutes.
Then stir in the chicken stock cube.
Let it cook for a further 10 minutes until the vegetables are soft.
Drain the juice from the tinned tomatoes down the sink and add the tomatoes to the soup.
Add the chicken.
Take it off the heat but keep mixing until it is all heated.
Add the parsley
Serve it to your family and friends

Tip: it tastes great with chunky bread which you can buy uncut from most supermarkets or bakeries.


This takes me about 40 minutes to make and cook.
