I love making soup especially for lunch. I prefer clear soup as compared to creamy and thick soup, though, thick soup is a warming welcome in a cold winter day.

My standard soup base is carrot, celery, onion, celery and water and let is simmer for one hour. I would then add in other ingredient depending on what is available that day. Sometimes, it will be left over roast chicken, lamb chops and roast beef.

Just the other day, I had a piece of thick cut smoked bacon leftover from breakfast. I decided to use the bacon to make a soup.

For the vegetable stock-
1 carrot- diced
1 celery stem - diced
1 medium sized onion- diced
A sprig of thyme leaf (optional)
300ml water
salt to taste

Add all diced vegetables into the pan of water and bring it to boil. Thereafter leave it to simmer.

Soak a handful of lentil for 5 minutes. Drain and add lentil into soup base.

Fry or grill the smoked bacon till crispy. Cut bacon into bite size, add bacon into the soup.

Season soup with salt and black pepper. Leave soup to simmer for one hour.

Serve hot.

This soup smell terrific. The soup is filled with the smoked bacon aroma and it also have the nutty taste of the lentils. The sweetness come from the vegetables so there is no need for sugar or any flavour enhancer.

I believe this soup is expandable and you can add in any leftover to create a different taste. It is not only healthy (except for the bacon but I don;t think one piece of bacon is unhealthy), you do not have to throw away leftover meat.

Summary: Could be as satisfying as bacon sandwich.

YUMMY YUMMY....may have to steal this idea, as im making soup tommorrow for a halloween party, and this sounds scrummy, may be a good alternative to the pumkin soup...thanks x
