Advantages: very warming and quick to make

This recipe will really warm you up on a cold day, its proper name is corn chowder, my auntie from america gave me the recipe and its really tasty, and only takes about 30 minutes to cook.

ingredients:

1 onion
tin of sweetcorn
1 large carrot
12 oz of potatoes
1 tablespoon of sunflower oil
1 bay leaf
2 pints of vegetable stock
10 fl oz milk
salt and pepper

1) Peel and chop the onion, scrub the carrot then thinly slice it, peel the potato and cut up into small chunks
2) heat the sunflower oil in a saucepan, add the onion and cook gently until soft and golden stiring occasionally
3) then add the sweetcorn carrot and potato and bay leaf and cook for two minutes, then add stock and bring to the boil
4) reduce the heat to low and cover with a lid and continue cooking for 15 minutes just stiring occasionally, then add the milk and cook for another 5 minutes
5) take some of the vegetables out and place he rest in a blender and blend until smooth
6) return the chunky vegetables to the smooth mix and warm through adding a pinch of salt and pepper

Now enjoy!

If you prefer all the soup smooth then blend all the mix, you can also add fish to this soup if you like, but i prefer it as it is, its great put in a flask to take to work on the cold days as its so thick, ceamy and warming, and its really quick and easy to make hope you like it.
