Advantages: quite low cost and tasty
Disadvantages: can take a while to prepare the veg
Bacon, Carrot and Corriander soup
Ingredents
8 slices smoked back bacon
5 large carrots
small red onion
i small sweet potatoe
salt
pepper
1 - 1 1/2 pints chicken or vegetable stock
oil
freash corriander
you will need a large pan and blender
1. peel and chop sweet potatoe into chunks
2. cook sweet potatoe till soft, by steaming or boiling, put to one side
3. finely chop red onion
4. peel and dice carrots
5. cut bacon into small/medium sized pieces.
6. put a frying pan on the heat and add a little oil fry the bacon and onion till lightly brown, take out of pan and put to one side, do not discard the oil.
7. if the pan needs more oil, then add it and reheat, and add the diced carrots, season with salt and pepper and cook till light brown and they start to soften.
8. put the sweet potatoe, onion, bacon and carrots into a blender blend using the stock until it is a consitancy you like {i have it the consistancy of a thick puree}.
9. reheat on the hob and add a handfull of finely chopped corriander.
serve with thickly sliced brown bread and butter
enjoy
