Soup is my current favourite thing -not only is it healthy and super comforting in this bad weather but with the help of my new rice/slow cooker is simple and easy to make. I started making this simple soup a couple of weeks ago when I had a version of it in the Hilton on room service. It has hardly any ingredients but tastes great. Soup is a brilliant thing to start with if you're not a natural cook as well - that's part of the reason my recipes aren't too exact in measurements, use whatever you have in the cupboard and use you imagination to build your confidence, with soups you can't go far wrong.

This soup is best blended so make sure you have a hand blender or food processor to hand.

So Low Fat Carrot and Parsnip Soup
(Serves a greedy 2 an most likely more)

3 Carrots
3 Parsnips
2 Onions
2 Sticks of celery
Dried parsley (use fresh if you want and put it in at the end)
Black pepper
Sunflower oil for softening the veg
2 Vegetable stock cubes
2-4 pints of water


1.Chop all the veggies roughly - it really doesn't matter what size of shape they are, and throw then in a large pan with some sunflower oil, stir until the onion is transparent and they start to smell nice!
2. Add enough boiling water to cover the veg in the pan and a little bit more, add two veggie stock cubes to the pan and stir until dissolved. Add black pepper and dried parsley to taste.
3. Cook for one to two hours on a low heat or until the vegetables are cooked
4. Whizz with a hand blender or food processor until smooth
5. Garnish with black pepper and serve

Very inspiring thank you - I used to make soups like this lots and have got out of the habit - they're great aren't they :)
