Advantages: Really loverly warm wintery taste ** GREAT XMAS SOUP***

Disadvantages: Not good for vegatarians!!!! other than that - none!!

My family love soup, especially in the winter for our lunch, but also it's very cheap to knock up, especially vegetable soups and mushroom soup etc. I never made homemade soups until I met my husband who is a chef and he taught me some recipes, he is much better than me and below is the recipe to one that he found and made last year and it was really nice and although it was described as a winter soup, we have had it loads of time times throughout the year, the smell of it is intoxicating, and makes your whole house smell gorgeous especially with the bread baking at the same time..... yum yum !!

For anyone with large families, then although you may find cooking from scratch a bit daunting, I promise you, soups are so easy to make and are really good money savers.


Parsnip and Bacon Soup


**Ingredients**


1 onion
1 carrot
250g parsnips
250g bacon
1 tablespoon of olive oil
25g butter
1 litre vegetable stock


**Instructions**

1. Chop the carrot, parsnip and onion all into small pieces and also prepare the bacon ready...I slice into small slices or you can always buy the bacon bits that are already diced up.

2. Heat the butter and olive oil in a large pan.

3. Add the onion, carrot and parsnip and cook gently for 5 mins.

4. Add the bacon and the stock and bring to the boil. Simmer gently for 25 mins

5. Put the mixture into a blender and blend until smooth, or blend with hand blender etc

6. When the soup is of a consistency of your choosing (I like my soups quite thick, but my husband likes his thinner) then pour back into the pan.

7. Add salt and pepper to your tasting and serve hot

8. Can add cream, parsley etc for taste and good presentation if you choose to, but I never seem to bother with this, as a. more expense to buy the parsley and cream, unless you have herb garden (mine died!!)

If its just a normal lunch, I tend to just serve with part baked bread from Tescos, but if its when people are coming for lunch or when I can be bothered or have the time then we try and bake our own bread........ well saying that I tend to let hubby bake the bread...he is the best at this type of thing, and I'm the best at the normal things like shephards pie etc!!!! hehe.

Summary: Cheap, easy and very yummy, also very satisfying.
