Advantages: quick, easy, cheap, little washing up

Disadvantages: if youre like me you need to be in the 'mood' for soup

Im not a huge fan of any soups, but like most I find it comforting in this cold snap or particularly if Im feeling under the weather!

I like this particular recipe as its quick, doesnt require lots of ingredients and as you will notice in most of my recipes makes very little washing up!

I usually make this one the day after having a ham joint as I use all the trimmings / scraps that are leftover.

Above all its a hit as my daughter will eat it! I think its the saltiness of the ham in it but once in a while doesnt hurt! After all it also includes one of our five a day.

You will need:

750g of fresh or frozen peas
50g butter
1 large onion
100g ham ( trimmings or leftovers as previously mentioned else cubed)
450ml ham stock
sugar
salt and pepper
150ml double cream (this is optional at the end)

Melt the butter in a pan, meanwhile chop the onion.
Add onion to the pan and cook gently for 5 minutes or until soft.
Add the peas and stir then add the ham, stir again.
Cover with the stock. (I always buy this ready done)

Bring this to the boil, lower the heat and add salt , pepper and pinch of sugar to taste.
Simmer for around 10 minutes before removing from the heat and blitzing in a liquidiser until smooth.

Pour back into the pan over a low heat and add the cream.

Obviously its a richer, creamier soup with the cream but its optional for all those calorie conscious cooks out there!
When I ommit the cream and only if my toddler isnt joining me then I like to add a pinch of chilli for those of you that can stand the heat!

I love this as an excuse to eat a fresh tiger loaf!

Sounds lovely, might have a go at this - though i'm not very good with soups! lol

I like the sound of this, would probably omit the cream and add the chili though, lovely, thanks!
