I love making my own soups and have tried numerous combinations of ingredients with a mixture of results! One of my all time favourite soups has to be Minestrone. My version is really a meal in itself. It is cheap and easy and very nutritious. To make enough soup for 6 people you will need-

1 onion.
4 carrots.
1 parsnip.
2 potatoes
olive oil.
2 large tomatoes.
1 can of butter beans, haricot beans or any other pulse you fancy!
10 tablespoons of passata.
¼ of a cabbage.
A handful of dried pasta- I like to use macaroni.
A few handfuls of spinach.
1-½ pints of stock.
Ground black pepper
Fresh Basil.


1. Chop all the vegetables-you can do this roughly.
2. Fry the onion in a little olive oil until soft.
3. Add the stock and passata.
4. Add all the chopped vegetables and simmer for about 45 minutes. You may need to add a bit more water if the soup gets too thick.
5. Cool the soup and then blitz in a blender.
6. Return to the saucepan, bring back to the boil and add the pasta. Cook until the pasta is tender.
7. Add the chopped cabbage, spinach and beans.
8. Simmer for a further 5 minutes or until the cabbage is cooked.
9. Add the basil and black pepper.


The amounts can be increased if you want to make more. This soup will keep for a few days in the fridge. It is very filling and cheap to make. I find shop bought soups too salty and much prefer homemade! This soup is low in fat, high in fibre and vitamin C.

I like to serve this soup with home made bread for a delicious lunch. Both my children enjoy this soup too and it's a great way of getting them to eat more vegetables. If you prefer you could always leave out the blitzing stage for a really chunky soup.
