Ok so my hearty vegetable soup comes from me attempting to be healthy and playing about with my food making something that hadn't got lots of additives in. I literally tried to put what I fancied in and it actually turned out ok so I will let you in on my lovely filling and very healthy soup so you can try it at home.
Ingredients:
½ pint Vegetable Stock
½ Cabbage
5 Carrots
2 Onions
4 medium sized potatoes
1 red, green and yellow pepper
1 parsnip
3 Tomatoes
Curry Powder
How:
1. Chop all vegetables into quite small chunks.
2. Now this part is up to you as you can mix up the veg in a processor so it makes a paste or you can just add them in a pan all chunky.
3. Make up the ½ pint of vegetable stock.
4. Pour the stock in the pan with all of the vegetables and bring to the boil.
5. Add however much curry powder you like. I usually put about 3 table spoons in as I love it.
6. Keep boiling for about 15 - 20 minutes until everything is cooked, the best way is to check the potatoes if you have left them as small chunks.
7. Serve into a dish or 2 depending on how hungry you are.
Extras:
Now vegetable soup is extremely easy but there are some great extras you can add to make it even nicer.
The curry powder is great as it makes it taste that bit spicier which is great. Then another option is to add a little cream which makes it delicious but of course takes away a bit of the healthiness of the soup.
Then a great thing to do is when you have brought everything to boil, is to add ½ can of chickpeas which are yummy and this gives the soup that extra crunch. Lentils are another great addition and as both of these are so healthy for you it means that you can rest easy and eat as much as you like. They also make the soup even more filling.
A good thing about this simple recipe too is if you don't like a particular vegetable you can just change it for something else as almost anything will go. Then if you make a big batch, I tend to keep some in the freezer so I can just get it out when I want to. Brilliant for dinners in the week at work.
