This delicious soup originates from North Africa but this particular recipe is Algerian. This soup is served with Pitta or French bread and makes an excellent healthy alternative to processed tinned soups. Firstly I am going to give you a list of ingredients that you will need to make this soup.

Half a Lamb shoulder or 6 pieces of Lamb back chops.
2 medium onions blended.
A handful of finely freshly shopped coriander.
1 teaspoon double concentrated tomato puree
1 tablespoon vegetable oil
Black pepper
Cumin
Salt
1 courgette blended
2 medium carrots blended
2 potatoes blended
1.75 litres of boiled water
150 grams crushed bulgar wheat (frik)

This is how to make the soup;

Firstly wash your lamb and place into a large pot ideal for making soups. Blend your two onions and add to the meat. Wash and finely chop your coriander and then add to the pot. Spoon in one heaped teaspoon of your tomato puree. Add one table spoon of oil. Grind in your black pepper. Add in 3 quarters of a teaspoon of cumin. One and a half teaspoons of salt ans stir on a medium gas for 15 minutes. Now blend your courgette, carrots and potatoes. Once your 15 minutes are up add your pureed vegetables and 1.75 litres of boiling water. Finally wash 150 grams of bulgar wheat (frik) and add to the soup. Cook for a further 45 minutes and then serve into your best soup bowls!

This recipe serves 5-6 people and is a great starter to a main meal for when inviting family or guests.

sounds good, i've never tried African food before....I assume the veg are cooked before they are blended?
