Halloween pumpkin soup (Soups)

This is my recipe for pumpkin soup. I make this every year and look foreword to it.
This is how I will be making it today.

Ingredients

I medium Pumpkin
1 leek
1 carrot
1 pint water
Black Pepper to season
Half a cup of cream although I personally use Elmlea
3 teaspoons garlic paste
Olive oil
1 - 2 teaspoons of chilli powder

Method

Prepare the vegetables by peeling and roughly chopping. These vegetables will eventually be blended so don't worry how they look.

Take a large pan and add some olive oil.

Add the vegetables and the garlic then fry the vegetables off for about five minutes pour in a pint of water. I add boiling water to get things going quicker but you can equally add cold water and bring it up to the boil.

After 5 minutes of boiling add the stock to the pan. I like to use chicken stock but you can replace this with vegetable stick if you want a vegetarian soup. Check tastes after five and add more stock if required.

Add chilli powder by adding a little at a time and check taste you can always add more but can't remove.

Put lid on and turn heat down so I simmer for 45 minutes.

Remove form the heat and leave to cool for ten minutes then blend.

Mix in the cream and black pepper and serve with fresh bread

This is a simple and perfect recipe for Halloween
