Great basic for your repetoire

Ok so "Fridge Soup" is a weird title, I admit but it'll all make sense in aminute. This soup was invented during a time of extreme penny-pinching where I needed something for lunch at work. It was made from the contents of my fridge at the time (Aha!). SInce then it has had many variations (more on that later).
Once made, soup is the easiest ready meal in the world: take out of fridge, heat up, nom. So what I would do is make a large batch on a sunday and take it to work each day.
Ingredients for 4-5 servings of the basic soup:
two stock cubes
whatever fresh herbs you have, or dried mixed herbs
chop all vegetables into 1-2cm dice, making the carrots smallest as they will take longest to cook. Dissolve the stock cubes in boiling water and add all ingredients to a pan and bring to the boil. Reduce to a simmer until vegetables are tender.
Now, I don't like my soup chunky but you could leave it like this if you wished, my mum does. I blitz it to within an inch of its life until super smooth. Then at the last minute, add the seasoning and cream to taste.
Now, the beauty of this soup is that it is just great as it is, but being so simple it is great as a base to be added to. So far my favourite variation is to blitz it then add sweetcorn and/or crispy bacon bits-try whatever you like!!
