Advantages: it tastes yummy!, it uses the manky avocados up
Disadvantages: can be quite rich
Isn’t that strange, I always thought Avocados were spelt Advocados – That’s the Bristolian in me! This is a posh recipe (well, I think it’s quite posh!) I saw on one of those ‘can’t cook - never cook’ Ainsley Harriet type programmes. Being a bit of an airhead I couldn’t remember exactly what went in it, so I put in a few extra things and took a few ingredients out (things I don’t like!) and it turned out great! • Ingredients 1 large onion - finely chopped 2 garlic cloves - crushed 2oz unsalted butter 1½ oz plain flour 1½ pints vegetable stock 2 really ripe avocados (just before they go all yucky) Juice of a small lemon (squeazy lemon is fine) 2 teaspoons chopped coriander (dried is ok) ¼ teaspoon ground cumin ¼ pint single cream Salt and black pepper • What to do Fry (or sauté if you’re being posh) the onion and garlic in the butter for about 4 minutes until golden and soft. Stir in the flour and cook for 2 minutes while stirring. Add the veggie stock and bring to the boil (keep that stirring going!). Then turn the heat off as the next bit uses a blender. Halve and take the stone out of the avocados (get an old chopping knife and whack it into the stone, it pops out really easy then), scoop the fleshy green stuff out and pop it into a blender. Add the lemon juice, coriander and cumin and blast the mixture until really smooth (hence the name of the soup!), then gradually add the thickened stock mixture while running the blender at a low speed. Transfer back into a large saucepan and stir in most of the cream and season (I’ve heard that saying used before in cooking!). Heat through but don’t boil (it really spoils the taste). Serve immediately with a little bit of the cream on top to look good! If you want, you can add a bit of chilli powder, but I think that it takes away
the ‘yumm - smooth’ factor and I hope you enjoy it as much as I do.
