This is a really easy soup to make but the end result looks as though you have put a lot of effort into it! Its really easy and most of the ingredients will be lurking at the back of your cupboard. Its particularly good in the winter wen you need something to warm you up at short notice. I know this is a bit out of season but due to the lack of hot weather we need something spicey and exotic to warm us up!

Ingredients -
4oz red lentils
2 tsp vegetable oil
1 large chopped onion
2 crushed garlic cloves
1 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
2 tbsp tomato puree
1 ¼ pints vegetable stock
12 oz can sweetcorn
salt & pepper

Rinse and drain the lentils in cold water. Heat the oil in a big pan (this makes a lot of soup) and fry the onion and garlic until they are soft.
Stir in the cumin, coriander, garam masala, tomato puree and 4 tbsp of stock. You can use curry powder at a push instead of the separate spices. Mix and simmer for 2mins.
Add the lentils and pour in the remaining stock, bring to the boil, reduce the heat and simmer (covered) for an hour. This ensures that the lentils are tender and the soup has thickened. Stir in the sweetcorn and heat for 5 mins. Season well.

If you are feeling particularly rich or decadent top the soup with a spoonful of yoghurt.

Its delicious!

I'm a sucker for things with garam masala in, I'll try this :)

Kidney beans would be great as long as they were pre-cooked you could add them at the end. That way you would only have to heat them through and they would retain their texture. Thats the great thing about this recipe - its so easy to add bits to and change things!
