Advantages: Great starter or on it's own.
Disadvantages: Takes a bit of time to prepare
My most favorite soup of all time has to be mushroom especially Cambells that was until I was shown how to make it myself by a friend of mine who is soup mad so I will pass on this delicious reciepe to you all but beware you may become addicted. Ingredients 40g Butter 700g Mushrooms any type that takes your fancy but I stick to Normal(sliced) 1 Onion(red is best chopped) 1 Shallot(chopped) 25g Flour 2-3 spoons of dry wine(white and not to much hic hic) 2 and a half pints of vegtable stock (tescos own is good) 150ml Cream(single) 2 spoons of chopped parsley(fresh is best of course) A squirt of lemon juice and pinch of salt Spoonful of Creme Fresh to garnish for us posh types. Melt the butter in a large frying pan then add mushrooms and salt. Cook for about 8 mins until they start to brown then remove from heat. Melt the rest of the butter in another saucepan and add the onion and shallot cooking for about 2mins until soft but not brown. Add wine and stock to soft onions. Take out about half the mushrooms and add the rest to saucepan with onions etc in it. Cook and cover gently for about 20 mins. Allow the soup to cool then blend in blender or pan until nice and smooth with no lumps. Place the other half of the mushrooms back in the pan and heat for about 10 mins. Add a squirt of lemon juice and serve hot Garnishing with the Creme fresh. As all good soliders do serve with Bread and if you feel a bit flush a nice bottle of Pouilly Fume. I love this soup and all my dinner guests get this as their starter but I will have to think of another soon as they all know whats coming and I don't want them to get bored with it do I ?
