Creamy Mushrooms On Toast (Speedy Meals)

I like to cook this quite often because it is filling and makes a nice breakfast or lunch. It only takes about 10 minutes from start to finish and is very easy to prepare and cook, sometimes I'll have it before going to bed because it's tasty and more interesting than having a bowl of cereal.

It's called Creamy Mushrooms On Toast. I usually use button mushrooms but my mom makes it using a mixture of different types of mushrooms and that makes it taste extra special.

200g mushrooms
Soft cheese
Vegetable Oxo cube
2 slices of fresh bread

Peel and slice the mushrooms and put them into a frying pan with 6 tablespoons of stock made of the Vegetable Oxo cube.

Let the mushrooms absorb all the stock by bringing to the boil and stir frying them in the bubbling stock.

Add a dollop of soft cheese and stir it through the mushrooms making sure they are evenly coated.

Heat gently for 2 minutes while making your toast. Butter the toast if you like and spoon the creamy mushroom mixture over them. Grind some black pepper over the top and eat.

You can use any soft cheese you want, I like the Philadelphia Garlic and Herb one with this dish but the plain one is nice as well. The bread can be any type as well but I usually use the loaves you have to cut yourself and slice thick doorstop sized slices.
