Anything goes in quesadilla's which are quick and easy to make, with a great taste that fills you up.
Specifically speaking quesadilla's are mexican in origin and cheese is a main component of the dish.
I have just made this for dinner and it takes around 15 minutes to prepare and cook. What is great is that the dish is pretty versatile, which means any leftover vegetables or items you have in can be used.
What I tend to use most the time include:
Discovery Tortilla Wraps
Basic mozzerella ball
Grated cheddar
Tin of basic chopped tomatoes
Tin of basic kidney beans
A small red onion
3 large pieces of garlic
A handful of frozen peppers
Tin of Refried Beans
Jalapeno Peppers/fresh chilli's
Cayenne Pepper
Paprika
Salt + Pepper
Oil
The main ingredients cost under £5 so it is a great value meal, presuming you have staples such as salt, spices etc in.
Firstly I oil the saucepan and chop the onion and garlic. I place the onion in and start to cook it on a fairly high heat, then I add the frozen peppers and cook those. Once nearly done (around 5 minutes) I add the garlic and kidney beans, followed by the spices and salt and pepper. Once cooked for a further 2 minutes or so I add the tinned tomatoes and cook through, another 2 minutes or so. Finally the refried beans are added which takes 1 minute or so to cook through.
Next stage is to take a frying pan, lightly oil and place in 1 tortilla wrap to brown slightly (around 20 seconds each), once done I take it out and do the same with another tortilla wrap.
Each quesadilla will use 2 tortillas or if you just want a snack one could be shared. Once the tortilla's are cooked through I return them to the pan and place part of the cheese on and watch it start to melt, upon which I add the tomato chilli mixture followed by the remaining cheese and finally the other tortilla goes on top.
Next is the tricky part, of trying to flip the quesadilla over, so that the cheese melts on each side. Once turned over, it takes around 1 minute to finish off, I then slice it in half or quarters and its ready to serve.
I serve mine accompanied by some yoghurt and salad, however these are optional.
