I'm going to share my two favourite starter recipes with you. They are very easy to prepare but you always get lots of 'oooohs' of appreciation! Smoked Mackerel Pate ================ Preparation time - 10 minutes Cooking time - 0 minutes Cost per portion - about 50p Serves 4 Ingredients 1 packet of smoked mackerel fillets (usually 2 to a pack) 2 dessert spoons of creme fraiche juice of half a lemon Chuck everything in a food processor and blitz for ten seconds. I have two recipies I am sharing with you that I have had recently that have been very easy to make and great for the tastebuds. I've done quite a bit of entertaining over the festive season. Cooking a three-course meal especially for large numbers can be stressful. In order to alleviate the pressure, I have a rule that I either prepare a cold plate for starters or make a soup which can cooked days in advance and most of which can be frozen. If I decide to make soup, I make sure that it's a light one. I don't want my guests filling up on their starter and not being able to eat the remaining courses.
