I'm going to share my two favourite starter recipes with you. They are very easy to prepare but you always get lots of 'oooohs' of appreciation! Smoked Mackerel Pate ================ Preparation time - 10 minutes Cooking time - 0 minutes Cost per portion - about 50p Serves 4 Ingredients 1 packet of smoked mackerel fillets (usually 2 to a pack) 2 dessert spoons of creme fraiche juice of half a lemon Chuck everything in a food processor and blitz for ten seconds. I have two recipies I am sharing with you that I have had recently that have been very easy to make and great for the tastebuds. It does not cost that much and both recipies can be done in smaller or larger scales depending on how many people there are. Stuffed Peppers I had this myself about a week ago as a quick meal. I've done quite a bit of entertaining over the festive season. Cooking a three-course meal especially for large numbers can be stressful. In order to alleviate the pressure, I have a rule that I either prepare a cold plate for starters or make a soup which can cooked days in advance and most of which can be frozen. If I decide to make soup, I make sure that it's a light one. I don't want my guests filling up on their starter and not being able to eat the remaining courses.
