This particular starter can also duble up as part of the side dish for a main course and is particularly versatile as it is suitable for vegetarians. On the down side it did take me a couple of attempts before I got it right as attempt number one and two ended up in a congealed mess floating around in the frying pan however once I switched to a decent wok I have never looked back.

The ingredients are

Can of sweetcorn or about 225g of frozen sweetcorn
2 red chillies with the seeds removed and finely chopped
2 cloves of garlic which you crush
10 lime leaves (these are not easy to find in your loca supermarket but will be in specialist Asian stores
2 tbsp fresh coriander
1 large egg
75g of cornmeal which will act as the binding agent in the dish.
100g of fine greenbeans which are finely sliced
groundnut oil for frying

With the exception of the green beans and oil mix all of the other ingredients up in a large bowl and stir well. Once these have fully combined add the green beans and continue to mix together.

Form the mixture into evenly sized balls making sure that you flatten the balls in the pals of your hands to ensure that they bond togeher.

Heat the ground oil in your wok ensuring that it is really hot, if you do get the heat right then there is a good chance the ingredients will fall apart. Cook the fritters until brown and crispy on the outside making sure you turn them occasionally.

I usually drain any excess oil away with kitchen paper and serve straight away with a side of lime which can be squeezed over them.

They are absolutely georgeous and not too filling and can be made in a matter of minutes.
