Mushrooms are my favourite food item ever. So healthy for you and seem to be so substantial. Whenever I feel peckish and I’m passing the fridge I dive in and come out with a mushroom. Yummy!

I absolutely love garlic mushrooms when I go out as a starter so I decided to make my own. I am one of these cooks that doesn’t really go in for recipe books although I have all of the Jamie O books and they’re fab.

Ingredients – serves 4 as a starter

1 small pack of closed cup mushrooms
Vegetable Oil
1 small egg
2 slices of brown bread – thick
1 clove of garlic

Preparing

Wash the mushrooms and chop off the stalks

Cut the slices of bread into small squares and put into a blender. A few seconds in there will ensure that the squares turn into fine breadcrumbs.

Crush the garlic and add to the breadcrumbs. Mix thoroughly in a large mixing bowl.

Add the vegetable oil to the pan, about an inch of oil will do in a large frying pan. Place on a low heat setting.

Beat the egg and add the mushrooms (this is so the breadcrumbs will stick)

Roll each egg covered mushroom in the breadcrumb mixture until completely covered and place onto kitchen towel ready for cooking.

Cooking

Turn up the heat on the oil and when hot enough add the mushrooms. Tip for checking if hot enough is to dip your hand in cold water and flick it into the oil. If it bubbles then the oil is hot enough.

Shallow fry until the breadcrumbs go a golden brown colour, turning the mushrooms frequently.

When golden brown remove from the oil and place on kitchen towel to drain excess oil.

Serving

I normally serve in a bowl with Oregano sprinkled on the top to garnish.

Sour Cream and Chives

This is perfect as a light starter for people like me who like to have a 3 course meal but have eyes bigger than their bellies!

Summary: Yummy - especially with Garlic Mayo
