Advantages: My ideas

To me a starter is really where you set the tone for the dinner (or lunch).

I like to prepare a salad with Mozzarella, where I add tomatoes, some cucumber and finely chopped onions, or a salad with prawns, by adding fresh prawns to oil, lemon, again, finely chopped onions and small pieces of pepper.

If I cook something, it could be small pieces of toast with some tomatoes on it and may be anchoives or artichokes.

It is also very easy to just prepare some small dishes with good taramasalata and trout or salmon eggs, which are cheaper than caviar and taste very similar.

Together with starters you should serve predominantly white wine. the danger of red wine is that it may make people feel too sleepy, and remember, a starter by definition is meant to open the games!

Anchovies..........aggh, try stuffed red peppers with boursin, topped with paprika and chilli,drenched in olive oil, side dish of mixed olives, yummy, Paul.
