NICE N' EASY PRAWN COCKTAIL - serves 4
Call be old-fashioned but I still love prawn cocktail for a starter - this recipe is tasty,quick and healthy - not too filling so you are not 'stuffed' before the main course!
INGREDIENTS
1/2 round lettuce,washed and dried (iceberg is nice as well)
2 tbs mayonnaise (love Hellman's Light)
4 tbsp natural yoghurt
3 tbsp tomato ketchup
2 tbs Worcestershire sauce
2 level tsp of bottled horseradish sauce
2 tbsp lemon juice
250g (8 oz) peeled prawns
METHOD
1. shred the lettuce and use to half fill four large wine glasses.
leave to one side
2. Combine mayonnaise with the natural yoghurt, ketchup,Worcestershire sauce,horseradish sauce and lemon juice.
3. Add the prawns and mix well.
chill lightly.
4. Spoon equal amounts into the glasses.
5. Garnish with thin lemon slices if desired for a 'show off' / restaurant effect!
6. Serve with brown bread and butter.
*** you can leave out the horseradish sauce if you want - I know a lot of people do not like it and this is still a really tasty starter ***
