A fave of mine is Bruschetta. Bruschetta is a very versatile choice as by adding meat to it you can buk it out to become a main meal. Anyway, as a starter it is also very good so here is the recipe:

Ingredients
Tomatoes (proabably one per person) - chopped into small chunks
Red onion (as much as you like) - finely chopped
Ciabatta bread - depends how greedy you and your guests are as to how much ciabatta you will need)
Balsamic Vinegar
Basil (fresh or dried) - quantity is up to you
Fresh garlic glove

Method:
Put the tomatoes that are chopped into small chunks, the red onion, a dash of balsamic vinegar and basil in a bowl and mix together.
Cut the ciabatta into medium sized pieces and then cut each piece in half exposing the fleshy bread inside. Rub the bread with garlic and lightly toast.
Place ciabatta on a plate and top with spoonfuls of the tomoato mixture.
Serve cold with a sprig of fresh basil.

Hmmm - yummy!
