Advantages: Tastes nice
Disadvantages: I don't think there are any
In a sense I'm reviewing my recipes so if anyone does decide to rate this, I would appreciate it if you rated the food. I know some of you only rate proper reviews, but I think some of you would still find this useful.
My favourite starter is really simple. The ingredients you will need will be;
1 Red Onion, roughly chopped
2 pots of soft Welsh Goats cheese (available from any supermarket)
Brown Sugar
Olive Oil
Salt and Pepper
4 large sheets of Filo pastry.
Pre-heat oven to 160 degrees C.
Heat a little oil in a frying pan and add the onion. Spread the onion out in the pan, then liberally sprinkle some brown sugar. Stir well until all the granules dissolve. You are looking to caramelise the onions.
Take the goats cheese and place in a bowl with a drizzle of oil and some salt and pepper. Mix well until the cheese looks like a paste.
Take 2 of the filo sheets, lay on top of each other, and cut into 2 large squares. Brush lightly with oil, add a quarter of the cheese to the centre of the pastry. Because of the way its folded, you need to flatten the cheese into a diamond shape. It should be about 1 - 2cm thick (depending on the size of your pastry). Add some of the onion, fold in the corners to the middle and then glaze with oil (or egg).
Place in a greased tray and put in the oven for about 6-7 minutes, or until the pastry just starts to brown around the edges.
Serves 4.
Serve with rocket and a Lemon vinegarette. (1 part White wine vinegar, 3 parts Olive oil. Add some lemon juice, pepper, salt and come chives, shake well.)
I love this and so have most of my guests. (I say most, one didn't like cheese but I didn't know that at the time!)
