Advantages: Delicious, easy, cream!

I like to keep my fridge stocked with the basics and when I am about to embark on the creation of a new culinary delight I do like to use some ingredients that are already lurking in the depths of the frozen wastelands of the Indesit rather than buying everything anew from Tesco. As I am a cheese addict, there is never a shortage of this and for Christmas I was given an entire stilton. Most people will get clothes, books, videos from their father but I get cheese. Needless to say this was going to be some task to vanquish the stilton monster. I am also a less than healthy cook and believe that cream is an essential ingredient in almost every dish (the fact that we have recently taken out life insurance on my husband’s life and the diet of cream, chocolate and fried food is purely coincidental). Therefore, cream is also readily accessible at my house. This starter was almost destined for my table. Stilton and grape avocados: delicious and quick to make. INGREDIENTS (for 4 people) 2 ripe avocados juice of half a lemon 100g (4oz) stilton 75g (3oz) black grapes 45ml (3tbsp) soured cream If you do not have any soured cream but do have some double cream or extra thick single cream you can use that but just add a few sprinkles of lemon juice to it. I always like to keep a large bottle of Jif lemon juice in my fridge, as it is always useful! METHOD 1. Cut the avocados in half, stone them and scoop the flesh from them. 2. Cut up the avocado flesh and mix together with lemon juice, crumbled stilton, halved grapes and the sour cream. 3. Spoon the mixture back into the avocado skins. 4. That’s all folks! DELICIOUS Now, it couldn’t be much easier than that could it? Avocados can be a familiar choice as a starter and I often find them boring and tasteless when served with just oil but this melee of cheese and cream tu
rns an average dish into a heavenly concoction. It can even be prepared the day before and kept in the fridge ready to whip out and impress your guests. Garnish each avocado with grape almost cut in two, like a butterfly. You could garnish with anything you like: a dead dog, a used syringe or photograph of Will Young, however, I recommend the grape, although the others would certainly break the ice at parties. Enjoy and don’t be mean with that cream!
