Tantalising tasters to begin a meal something little not too filling
To tempt your taste buds ready for the main meal
.
Having friends round for supper I always make a starter. A starter should compliment the meal not be the same ingredients as the main meal not fish pate with fish main meal. . Here are a couple of my recipes for starters I often prepare.


Mackerel pate.
340g/12oz-smoked mackerel
85g/3ozsoftened-unsalted butter
85g/3ozcream cheese
Ground black pepper
Lemon juice

Skin and mash/mince mackerel
Beat the butter well until soft and creamy/ not melted
Beat in the cream cheese add the kippers beat well
Season with pepper and lemon juice if liked you can add a little horseradish cream
Pile into a dish and decorate with parsley or olives.
Any left over makes a good sandwich spread for lunch.
Serve with toast or cheese biscuits

Well not everyone likes fish

A tomato and mozzarella salad is good

6 tomatoes thinly sliced
6 oz mozzarella cheese thinly sliced
150ml French dressing
2 tablespoons fresh chopped basil
Basil sprigs for garnish
(You can use 1 onion sliced thinly or/and 1 or2 ripe avocados thinly sliced)

Arrange tomato on plate attractively with the slices of mozzarella (if using avocados pour the dressing over then first and allow it to coat them thoroughly or they will go brown arrange them and the onions attractively with the tomatoes and cheese) spoon dressing over and sprinkle with chopped basil garnish with basil sprigs and enjoy.


Or you could always serve a dip with fresh crunchy vegetable crudités
Heres an easy one
225g/8oz soft cheese with garlic
150ml/1/4 pint natural yoghurt
Beat the cheese soft add the yoghurt beat till smooth turn into serving dish chill garnish with parsley or chives /chopped spring onions
Serve with sticks of carrot spring


onions uncooked broccoli sprigs celery bread sticks or any thing else you fancy


Fruit is always a fresh way to start a meal good on a summers evening
Melon cut into chunks arranged with a few grapes few grapefruit segments decorated with a few fresh mint leaves.


If you are really short of time visit your local supermarket for a good pate or you could just halve a grapefruit sprinkle some sugar on and put a cherry in the centre.

I'll have to 'pass' on the pate. I can't abide fish. The others sound lovely though.
