Louises’ Enchiladas sauce (Stews & Sauces)

Being a really big fan of Mexican food I wanted to make my own ‘special’ sauce, reading through some recipe books and ingredients of other sauces, I concocted the mixture below:-

• What you’ll need
Packet of 8 flour tortillas (the Tesco’s version is fine)
Pot of fresh salsa (cooked salsa is ok, but if you can make your own, even better)
Pot of fresh guacamole (I’ve tried making my own on lots of occasions, but it’s cheaper to buy this!)

• Sauce
10oz of cooked sweetcorn (frozen is fine)
4oz of cottage cheese (I use a low fat version)
3 cloves of garlic (the bigger the better)
½ fresh chili (the ‘birds eye’ variety is good)
Pinch of salt
Pinch of sugar
½ tsp. ground cumin
1-2 tbsp. chopped fresh coriander (dried is ok, but you’ll get a stronger taste from fresh)
3 or 4 dashes of dark soy sauce (to darken the sauce)
Juice of ½ large lime (gives it that kick!)
10oz of mature Cheddar cheese (usually grated or cut into small chunks)
6oz of tinned plum toms (can be chopped)
3floz of vegetable stock
1tbsp chili powder (although, I use about 3!)
1 tortilla (can be frozen)

Combine everything above starting with the tomatoes and sweetcorn in a blender (if it’s taking too long add a little more veggie stock) until the result is a very gloopy almost non-runny orangey yellow colour. There will be enough to fit into 3 smallish containers and frozen if need be.

I use Quorn mince and pieces in my enchiladas, (as the BF is vegetarian) but you can use slices of chicken or turkey. Warm up some chili oil in a wok (I cook everything in one of these!) and add the Quorn, seal it, and keep it on a low setting. This is where you add the sauce, within about 20-25 minutes it’s all cooked.

• To serve
Put the rest of the tortillas in the microwave, remember to put greaseproof paper in betw
een each one, so they don’t stick! Put about 1-2 tbsp. of the mixture into the middle of the tortilla, adding a tsp. of guacamole, tsp. of salsa (Tescos do a lovely hot one) and 2 tsp. of sour cream, add a little grated cheese on top, fold up like an envelope and voila! A wonderfully tasty and really filling meal. (well, you try and eat more than 3!)
