A very easy dish to cook, use ingredients appropriate to the number of servings you want to make. I don't know exact quantities I go by taste and how much I have of something left in the cupboard!

I use organic fresh products where appropriate and I use food without added salt where possible.
Updated version, rough quantities added,
A hot, spicy vegetarian dish, I bake it in individual bowls, so extra portions can be frozen and reheated easily.
For 6 people
4 Cloves of Garlic
2 Large Onions
2 Peppers (I use red/yellow, green can be used, but I don't like them)
A mugful Lentils
1 Tin chopped Tomatoes
1 Tin Kidney Beans (I use the one in water from Sainsburys)
Fresh Chillies
Crushed Dried Chillies
Hot Chilli Powder
Paprika Powder
Grapeseed Oil (any oil can be used)

Topping
Potatoes

Boil & Mash potatoes as for shepherd pie

Chop and gently fry the onions and peppers in the oil, crush the garlic and add to onions and peppers, fry until softened. Add the fresh chillies/dried chillies/chilli powder according to taste. I use all three in small amounts to build up taste. Add the lentils & tomatoes and mix well, fry for a short time and start adding small amounts of water. Cooking the tomatoes with the lentils helps the cook quicker (as Jamie Oliver said). You don't want to add too much water, the lentils want to be cooked but the mixture not too wet.

When lentils are cooked add kidney beans, if it is too wet at this point reduce down a little.

Put mix into individual baking bowls, or large baking bowl and put potatoes on top like shepherd pie. Sprinkle paprika on top and bake until crispy.

Serve..

Summary: An easy meal which can be frozen in individual portions to save time.
