Advantages: ideal for a night inside the house

Disadvantages: not good if you don't like a cabbage

This is a dish ideal for a cold autumn/winter night inside, when you are tired to spend much too time cooking but also tired of eating noodles again.
This recipe serves 3 to 4 people, so you can cut down a bit on the ingredients if you want to prepare something for yourself only. I wouldn't suggest any major changes though on lemon and oil because it will spoil the flavour.

INGREDIENTS

1 medium cabbage
1 teacup of rice
olive oil
1 onion
3 fresh medium sized tomatoes
mashed lemon juice (out of one lemon)
Salt
Pepper

PREPARATION

Wash the cabbage and cut it in medium slices.Use a medium size saucepan and add the onion and saute the oil. When the onion is ready add the slices of cabbage and start stirring. Quickly add 2 cups of water and add the fresh tomato paste and stir again.
Cook for 10 minutes and then add the rice. Continue cooking until the rice is ready and the water is fully-absorbed.
Add salt and pepper as you wish.
Your dish is ready - You can eat your cabbage rice either hot or cold by pouring some lemon juice on top to improve the flavour.

I do somethign similar by wrapping the rice and tomatoes in half or whole boiled cabbage leaves and cook them in the water I boiled the cabbage in, very nice too!

This sounds nice as i do actually like cabbage. I hear all the ewwwwws from other people now. x

I'm onto a no winner here. My hubby doesn't like rice or cabbage. I would try it though.
