Veggie curry (Vegetarian)

My son's girlfriend was forever telling me about her Veggie curry and how cheap and simple it is to make and that I should give it a go sometime, not being a vegetarian and the thought of curry without meat!!! I just never got round to it.

They usually come over the odd weekend for dinner and last weekend I was told to put my feet up as Val would be making Veggie curry!

For such a simple recipe with simple ingredients and no meat lol! I was pleasantly surprised as it tasted really good, she used mild curry powder as I dont like curries too hot, it was a lot lighter to eat than a meat curry and I could clearly taste the potatoes and mixed vegetables.

For non vegetarians who just have to have meat in their curries, add the appropriate amount of your chosen meat!

This recipe serves 2.

Ingredients...
1 teaspoon cooking oil
1 small onion, finely chopped
1 clove garlic, finely chopped
1 teaspoon curry powder
6 tablespoons lentils
1 small potato diced
1 400g tin chopped tomatoes
1 400g tin mixed beans
1 cup of frozen mixed vegetables

How to cook...
Heat the oil in a pan and fry the onion, garlic and curry powder on a low heat until soft.
Add the lentils and potato with enough water to cover them.
Add the tomatoes and bring to the boil and simmer for 20 mins.
Add the mixed beans and frozen vegetables and simmer for another 10 minutes.
Serve with boiled rice and nan/pitta bread.

This curry tasted really nice and was easy to make,I plan to make some myself with added meat of course!
