This Recipe is great when entertaining guests as it looks amazing, if you use yellow peppers together with the red of the tomatos the colours are vivid and bright and look extremely appealing. It works best as a starter giving half a pepper per person or as a posh snack having a whole one each.
I find alot of vegetarian dishes quite bland so this one appeals to me a lot as the flavours of the toms and olive oil really come out when cooked. I hope you enjoy it!!

Serves: 2-4

Ingredients:

2 large Red or Yellow Peppers
20 cherry tomatos
20 basil leaves
Olive Oil
Salt and Pepper
1 large Goats cheese round
1 french stick

Method:

Heat the oevn to 200c

Wash, halve and de-seed the peppers, put to one side.

Wash and halve the cherry tomatos

In a large mixing bowl coat the cherry tomatos with a generous ammount of olive oil, season with salt and pepper and stir until evenly coated.

Chop the basil leaves into small shreds and mix in with the cherry tomato mixture, adding more olive oil if needed.

Place the pepper halves in a deep baking dish and fill each one to the top with the cherry tomato mixture and bake in the oven for half an hour (the edges of the pepers will burn but thats a good thing!!)

Cut the goats cheese into quarters, Remove peppers from the
oven and place each portion of cheese on top of each pepper.

Return to the oven for 10 more minutes until the cheese has melted and started to turn brown.

Remove from the oven and serve, pouring any juices from they dish on top of the peppers.

Serve with chunks of french bread.

Summary: Quick, tasty and easy on the eye.
