Chinese Vegatable Rice (Vegetarian)

This is a lovely rice dish that is a meal in itself and is ideal for a light lunch.

Ingredients

350g long grain rice
1 tsp turmeric
225g corgettes sliced
1 red and 1 green pepper with the seeds removed and sliced
1 green chilli finely chopped and the seeds removed.
1 grated carrot
150g bean sprouts
6 spring onions sliced
2 tbsp of soy sauce
salt.

First place the rice and the tumeric in a pan of lightly salted water and brng to the boil and then simmer until the rice is just tender. Drain the rice thoroughly ensuring that any excess water is pressed out completely, I found kitchen paper more than adequate for this.

Heat the sunflower oil in a large preheated wok and add teh corgettes and stir fry for about 2 minutes. Then add the peppers and chilli and stir fry for a further 2 minutes.

Slowly add th cooked rice to the wok a little at a time mixing it in as you go. Add the carrots , bean sprouts and spring onions and stir fry for another 2 minutes.

To serve drizzle with the soy sauce.

This is a lovely and quick to prepare meal and it also doubles as an accompainment to any main course you have prepared.
