Right now I could be killed for letting you know in this secret family recipe, so please do not mention my name and instead tell your friends it’s yours!!

For a 22 cm tart you will need:

- French mustard (English one will do the trick but it has to be strong)

- Gruyere cheese (please do not replace with Cheddar, it really is not the same)

- 4 or 5 big tomatoes preferably not too ripped as they will cook. They just have to be big, Beef Tomato are perfect.

- Oregano or Rosemary, or even both!

- Olive oil

- Salt and Pepper

- Shortcut pastry. You can buy it already made, it is even quicker!

Now follow carefully the instructions!

Preheat your oven at 220 or gas mark 5.
Roll the shortcut pastry and fill your tart dish like you would normally do to make a tart. With a fork, pierce some holes in the pastry to prevent it from rising.
With a spoon, coat the pastry generously with some mustard. Of course if you do not like too spicy, you can put less mustard, but once cook, the mustard will lost of its flavour.

Cut the gruyere cheese in thick chunks and arrange them over the mustard. Leave some space between the chunks has the cheese will melt (yum!)

Wash your tomatoes and cut them into very thick discs, do not take out the pips or anything, just slice them! Arrange them very tightly over the gruyere cheese. Very very tightly. Usually 4 tomatoes will do, but depending on the size you might want to add a fifth one.

Sprinkle some herbs, oregano or rosemary. Season with pepper and a bit of salt but not too much as the cheese is already salty. Add a bit of olive oil et voila!

Put your tart in the oven and let it cook for 30 minutes.
This tart is really easy to make and delicious hot or cold. I prefer it cold accompanied with a side salad and a glass of white wine in the summer. It is ideal for picnic, and you can even freeze it very well.
