A few months ago a friend came over for some wine and a chat and we decided we needed to cook something really nice for the evening as we both had had a difficult week. We went on the internet and had a search and came up with this.

Over the months I have tweaked it so that it’s now my signature dish.

You need:

200 g of halloumi or light halloumi if you wish
1 seeded red pepper cut into cubes
Lots and lots of olives, pitted if you so wish
1.5 red onions cut into wedges
And some olive oil

Preheat your oven to 220C and thread the cheese, vegetables and olives onto a skewer (as I never have any at home I pit them onto tooth picks, it takes longer but works just as well really). If you want you can then sear the skewers briefly in a frying pan. This is supposed to seal in the flavour I hear, but to be honest I don’t think it’s necessary. I normally just put them straight in the oven for about 10-15 minutes with a bit of olive oil and some salt on. Be careful to keep checking it as you don’t want the cheese to be too soft but the vegetables need to be a bit soft (although still a bit crunchy!).

That’s it, how easy is that!

You can serve this with a nice salad. I sometimes make this with a salad recommended on the BBC Food site. You need to toss together:

1 red pepper cut into small cubes
2 peeled oranges cut into cubes
Any left over halloumi cheese you might have
Plenty of baby spinach, chopped or shredded
Olive oil
Juice of 1 lemon

Season with salt and pepper if you wish or just have it as it is.

I would recommend this to anyone, it’s a fairly healthy meal but it still has a ‘Friday night feel’ to it. Don’t let the lack of meat put you off, the halloumi more than makes up for it!
