This is a very nutritious, quick and easy recipe for vegetarians.

Homemade 'fast food'.


MACARONI AND VEGETABLE BAKE:


INGREDIENTS:

Fresh florets of:

Broccoli,
Cauliflower,
Salt

1 tin of macaroni cheese. The very cheap Tesco and Asda own brands are quite adequate for this.

About 2oz grated cheese. (According to taste.)


EQUIPMENT:

1 oven proof dish. (1 litre size holds enough for two people.)
Saucepan to boil vegetables.



METHOD:

Break the caulifower and broccoli into florets and boil in salted water for about twenty minutes.

Place the vegetables into the oven proof bowl and pour over the macaroni cheese. Sprinkle grated cheese on top.

Bake in medium hot oven for about twenty minutes, or until the cheese is golden brown.



This will provide a main meal for two people and the recipe can be altered by adding different vegetables. If you are feeding more people increase the amount of vegetables and add a little more cheese.

This is fast food for vegetarians which is homemade and healthy.

Summary: This is a cheap, nutitious recipe that even non cooks can make.
