Advantages: plenty of veg, cheap, serves a large family or portions to freeze
Disadvantages: takes a while to make but it goes far
chunky roasted vegetable lasange
to make a 4 large or 6-8 servings to have with a side
1 box of dried lasange sheets
1 tin chopped tomatoes
4 red onions
3/4 courgettes
800g of any mushrooms
1 1/2 pints of white or cheese sause
hand full of greated strong cheddar cheese
salt and pepper to taste
oil for frying
chop mushrooms, onion and courgettes into rustic/chunky pieces and put in a roasting tin and lighly drizzle with oil and roast in a preheated oven, until slighly browned and softened {sometimes water is realised from veg, but donot throw away use with the tomatoes to make the sause.
mix the veg with the tinned tomatoes to make a thick sause.
get your lasange dish and layer first with veg sause the lasange sheets, cheese/white sause lasange sheet until ingredents are used up and the last layer is the white sause springle with the greated cheese and if you want a extra crispy top sprinle with bread crumbs, put in oven for 30 - 40 mins and until top is lightly brown
serve with salad, chips or garlic bread
also tastes great for leftovers as flavours get better
