Leek & Potato Soup
I have been attending some cooking classes on a Tuesday afternoon run by my kid's school and their association with a charity called Impact Tasty. We made this soup last week and I have since made it again. It is one of the most filling and tasty things I have ever had and extremely easy to make.
You will need:
1 medium potato
3 medium leeks
1 veg stock cube
300ml semi skimmed milk
700ml boiling water
50g butter
1 bay leaf
Wash the leeks and thinly slice.
Wash the potato and cut into smallish squares. (The size you cut the pots and leeks just means it will cook quicker.)
Melt the butter in a large saucepan with a lid and add the potatoes and leeks.
Stir until coated with butter and cook on a low hear for about 10 minutes, stirring occasionally.
Make up the stock in a jug and when the veg is softened add it to the saucepan. Then stir in the milk. Season it at this stage and add the bay leaf.
Bring to the boil, stir then turn down the heat and simmer for about 15-20 mins with the lid on. Stir occasionally.
When cooked remove bay leaf and allow to cool slightly. Blend it using a hand blender and add more water or milk if it is too thick.
Serve and enjoy. This is a very filling soup and will easily make an excellent starter if the dinner is a little on the small side. This saves you money on dinner ingredients as well.
However, it also makes an excellent lunch and will keep you full till tea time.
