Advantages: Quick and very good for you. Can be slow cooked.

As a lover of making food from scratch but also a lover of "let's-not-take-all-day-in-the-kitchen" I have a few recipes which are really quick but also taste delicious. As I have 3 Persian cats who are always in the kitchen when I am, they have to be quick as cooking with these curious individuals is not an easy task!
All my family are vegetarian or vegan and this particular meal is a vegetarian dish. It takes only a few minutes to prepare and it makes lots so you can keep it for filling jacket potatoes or tortilla wraps on another day.
I like to use Fair Trade/Organic ingredients but it tastes lovely with value ones too so either way it's a quick and easy meal.
Home Made Veggie Chilli with Quorn
Serves 4/6
1 350g pack of fresh Quorn mince (frozen is fine-no need to defrost)
1 large onion- Spanish ones are good for this
1 red pepper and 1 yellow one (give lots of colour to the dish)
1 Tin of chopped tomatoes
1 Tin of kidney beans in water (I prefer organic but as long as they are in water without salt they are fine)
2 teaspoons chilli powder.
A few drops of hot Tabasco sauce.
A large tin of Sweet corn (Suma make a lovely one which is fair- trade but any large one will do.)
Parsley to garnish.
Method
Chop the onion and peppers finely and fry in a little olive oil for 5 minutes until just beginning to brown
Add the quorn mince, tomatoes, drained kidney beans, and chilli powder and turn the heat down to low. At this stage you can also transfer to a slow cooker where it will simmer away nicely for about 3 hours for the cost of less than a light bulb!
If you are doing it on the hob cook gently for about 10 minutes and add the tinned sweet corn and a few drops of the Tabasco sauce.
After about 10 minutes it will be ready to serve and I like to garnish with a handful of chopped flat leaf parsley.
This will go really well with a nice glass of red and some Basmati rice. I like to add a little wild rice to the Basmati as it gives it a nutty flavour but plain is fine. It also makes a great filling for baked potatoes and wraps.
Summary: A great family meal which takes no time to make.
