Fantastic vegetarian sandwich - very greek, very healthy.
Ingrediants - nice bread - ciabatta is ideal
Hummus
Red Onion (one per person - yes really - the onions are the stars in this recipe)
Feta Cheese
Olive Oil
Something green - eg rocket, watercress etc
Method
1. Slow fry onions in olive oil until very soft - about 5 minutes
2. Push the onions to the side of the pan and put each piece of bread into the oniony oily pan to heat up and pick up the last of the flavours. (Really - it makes all the difference and it heats up your bread a bit too.)
3. Now spread one piece of bread thickly with the hummus.
4. Pile on the onions. Then crumble the feta cheese over the top of the onions and then top with the greens and put the last bit of bread on top.
You could add olives if you really loved them. Chopped chilli might be nice.
