Good old spaghetti bolognaise - minus the meat!

Before becoming veggie this was a meal I really enjoyed so it was important to me to find a vegetarian equivalent to keep me satisfied. Fortunately, with the help of quorn mince, I didn't have to look far and could just put together this tasty alternative.

Ingredients
1 red onion
3 garlic cloves
Half a tube of tomato purée
3 tins of tomato
2 stock cubes
1/3 bottle of red wine
Bag of quorn mince (it really is the best brand)
Red pepper
Green pepper
Oregano
Basil
Ketchup

The first thing you need to do is chop up your red onion into quite small pieces. Begin frying these at a medium heat until they soften somewhat but haven't quite browned. Now it's time to add your garlic for approximately two minutes, and then squirt half a tube of tomato purée on the top and mix it together. This helps concentrate the flavours into the paste.

After three minutes add your three tins of tomatoes to the mix before adding the quorn mince. Give it a good stir and wait for it to come to the boil. At this point you can add the peppers you have that you should have chopped into tiny bits, that will give the bolognaise an extra crunch.

Add 2tbps of basil and oregano, before crumbling in your two stock cubes. You should also season to taste at this point with some pepper and salt. Before you leave this to simmer for a while, add 1/3 of a bottle of red wine and a good few squirts of ketchup (odd but it does really enhance!).

Cover and leave to simmer for an hour or two on a very low heat so that the red wine has a chance to cook out. Serve with spaghetti of course!!

Sounds lovely, I shall have to try this as it looks like it would be very low fat and would fit into my diet much easier than using minced beef.
