It's hard to believe that something so easy and simple to make is one of my favorite dishes but it's true. Roasted Veggies is right up there with my all time faves of Homeade Chicken Pot Pie, Chilean Sea Bass, and Sourdough Bread. I usually make them when people come over to snack on or if we're grilling outside, they're even better made "on the grill" Shish Kabob style. Either way, the secret is in the sauce and the spices.....
Roasted Potatoes

Take as many potatoes as you need for your party. If it's just you, than use one or two. If it's two people use 3/4 etc....Chop them up into Wedges. Make sure your potatoes are put on a nonstick or aluminum covered pan (large cake pan or a glass baking pan ...do not use a cookie sheet, the oil will run off ). Preheat over to 400/425 Degress F (200/220 Celcius)
Olive Oil Mixture

2 Tbl's Olive Oil ( F.E.P = for every potato)
1Crushed (and i mean really crushed) fresh clove of garlic F.E.P
1 Shallot Crushed/Finely chopped (if you don't have a shallot , use about 1tlbs of finely chopped onion) F.E.P
1Tbls of Vinegar (Apple Cider Vinegar is prefered but you can use others, but do NOT use balsamic) FEP
Basil, Oregano, Fennel Seed, Sea Salt, Rosemary ,and Paprika (big pinches F.E.P)
Mix the above together with a crushing device (or the flat bottom of a large spoon), until it's the consistancy to drizzle on top of the potatoes. After you finish pouring the mixture over the potatoes, put in the oven for 20 minutes (depending on how thickly you cut the potatoes, if they are very thick wedges, check it after 20 minutes by seeing if a knife can go cleanly through the wedge with no resistance)

Use this SAME mixture with;
Large pieces of Red /Green Bell Peppers - 10 min
Cut up Carrots (minus the onion /shallot and vinegar) - 15/20
Asaparagus - 10 min or less
Large pices of Onions (minus the onion/shallot of course =) - 10 min
Brussel Sprouts - 10 to 12 min
Cherry Tomatoes (or large pices of Tomatoes) - 10 to 12 min

All these can be mixed with the olive oil and cooked at around the same temperature as the Potatoes. When mixing the Olive Oil ingrediants together, judge what you think is the best amount for whatever veggie your roasting. Some you can even cook together in the same pan just be sure to NOT overcook the Asparagus, some of the others can be grilled a little more than suggested and still taste great, but if you overgrill the Asparagus, it's like eating stringy chared green stuff =)

Summary: Low Fat, Easy, Inexpensive and Good for you? It's almost too good to be true!
