Low Carb High Taste Vegeterian Recipe:

As promised I am back with another low carb and interesting recipe.After eating lot of non veg dishes in my friend's anniversary I thought it was time for me to play around with vegetables.
So here was an opportunity for me to go green....
Vegdelight ( Name sounds good to you ?)

Preparation Time: 10 minutes
Cooking Time:35 minutes
Serves: Four
Ingredients that you will need:
------------------------------
a) One cup pumpkin cut into small uniform cubes
b) One Eggplant cut into unifrom pieces
c) Three Zucchini cut into small pieces
d) Three red onions sliced into wedges (I love onions so used a bit more)
e) Olive Oil/Spray
f) Finely chopped low fat fetta
g) About 3 tablesppon salt (Use as per your requirement)
h) Cracked pepper (Use as per your requirement)
i) Handful basil
j) Around 10 thick fine cut asparagus
Note: You can snap off the tough ends and if desired peel the stalks.
How to do it?:

1.Preheat oven to 220 degree centigrade
2.Mix and place all vegetables except asparagus in a tray lined with baking paper
3.Sprinkle the Olive Oil evenly over the mix
4.Sprinkle salt and pepper as per your taste
5.Bake it for around 30 minutes till it turns sparkling golden brown ( I love the color!!)
6.Add asparagus after around 15 mnutes spread it evenly.You can sprinkle some oil
and heat mildly for another 5 mniutes if you inted to serve hot.
7.Do not forget to garnish with chopped fetta and basil
Your delicious low carb vegdelight is ready to be served.I specially recommend this as you will get a break from your routine menu and nibble this palatable low carb and very healthy nutritious food.
