Advantages: tasty
Disadvantages: not the healthiest dish
I was a vegetarian for about 6 years starting when I was 15 and so I understand the frustration of been offered a dull alternative to meat when you go to dinner. My best friend is a vegetarian so I try to make her something special when she comes to visit but this is my favourite recipe to make her.
Puff potato pie
Ingredients
750g potatoes peeled and sliced thinly
2 finely chopped spring onions
I medium finely chopped red onion
150mls of double cream
500g of ready made puff pastry
2 beaten eggs
Salt and pepper
Method
Grease a baking tray
Boil a pan of water and the sliced potatoes and bring back to the boil then simmer for a few minutes
Drain and leave to cool.
Dry off any water on kitchen towel
Pre heat the oven to 200 degrees c or gas mark 6.
Mix onions, spring onions and cooled potatoes in a mixing bowl.
Stir in 2 tbsp of cream and add seasoning to taste
Divide the pastry in half and roll out one half to 23cm circle and the second half to 25cm circle.
Place the smaller circle in the centre of the baking tray
Add the potato mixture leaving a 2.5cm border around the edge.
Brush the border with some of the beaten egg.
Place the top layer of pastry on the pie and seal the edges by crimping the dough together.
Cut stem vents in the top of the pie then brush with the beaten egg.
Bake in the oven for 30 minutes
Mix the remaining egg and cream together and pour into the pie through the steam vent.
Return to the oven for a further 15 minutes.
Leave to stand for 30 minutes
Then serve either warm or cold.
You can make your own puff pastry but I think it is a lot of effort in comparison to the prepared pastry.
I have served it with chips or rice.
This is a great dish even for a change for non meat eaters. It does have the cream in so not the healthiest of meals but is also a nice change from the million cheese recipes for vegetarians.
