Advantages: Easy to make, Quick to make, very versatile!

Disadvantages: None For me!

Even though I am not a vegetarian, I discovered this recipe whilst dieting. It was a lower fat option for me but also works as a vegetarian dish! This recipe will easily feed 4 hungry mouths.

Ingredients:

1/ meat free mince ( I use Quorn)
2/ sliced mushrooms
3/ finely sliced onion
4/ grated carrot
5/ a large tin of chopped tomatoes ( or even cheaper buy whole and chop them yourself)
6/ tomato puree
7/ oregano
8/ spaghetti or pasta

Method:

1/ Gently fry together the mince, mushrooms, onion an carrot until softened.
2/ Transfer to a pan and add the tomatoes. Add oregano to taste and stir well. Simmer for 5 mins.
3 / Add tomato puree until sauce has thickened to preference.
4/ Simmer for around 15-20 mins stirring ocasionally.
5/ Serve with either spaghetti or pasta ( I prefer pasta )
6/ Garnish with a little more oregano

This recipe could be adjusted very easily to anyones taste:

1/ If your not vegetarian use meat.
2/ If you like lots of vegetables you could add any bits to it.
3/ Also if your not a pasta fan, this also could be served with potatoes

I'll leave the choice to you.

Also this meal can be frozen and used for a meal another day, as freezing does not cause it to loose any flavour. I've tried it and it tasted just as good as when it was freshly made.
