Traditional (and easy to make) Pad Thai Recipe
Thought I'd share with you an easy, tasty and malleable recipe that I kind of discovered through several other Pad Thai recipes and made my own.
Pad Thai is staple street food in Thailand and is a noodle based stir-fry with a thai twist. Sometimes I find it hard to dig out Thai spices and this recipe makes this easy as all ingredients can be obtained at any supermarket without any hassle:
INGREDIENTS: (serves 2-3... adjust spices to taste)
Sesmae/peanut oil
3 cloves garlic, crushed
Large chunk of ginger, chopped (maybe 3cm cubed)
2 chillis chopped (chose variety for hot - I like birdseye peronally)
Sauce:
1 tablespoon brown sugar
1 lime squeezed
3 tablespoon fish sauce
2 tablespoons soy sauce (dark)
Dash of rice wine vinegar
Sesame oil
Stir fry:
100 grammes Bean curd cubes (pre fried)
3 carrots, sliced finly in batons
2 courgettes sliced finly in batons
Brocolli cut into tiny florets
- add other veggies if needs be, or add chicken or prawns if not vegetarian
Rice noodles - 1 sheet per person, either fresh or cooked and washed
2 eggs beaten together
4 large spring onions chopped
250g beansprouts
large handful of peanuts crushed up
Preparation: Prepare the above ingredients and keep seperate. The key to this recipe is combining in the wok at the right time. Cooking only takes about 7 minutes from this point so its very quick
Heat a wok and pour in a good helping of oil. Add the beancurd, veg, ginger, garlic and chilli. Make a well in the middle of the wok and pour in the eggs. Allow to set for 30 seconds then whip it up into the mix. Stir in the noodles and pour the sauce over the whole thing. Allow to cook together for 2 minutes then add the beansprouts and spring onion. Turn the heat off and stir in the peanuts...
voila, a hot, tasty easy authentic thai dish
