VEGETARIAN SHEPHERDS PIE

*Ingredients*
150g Quorn/Vegetarian Mince
400g Potatoes
1 Carrot
1 Medium Sized Onion
100g Cheese
Vegetarian Gravy

*Serves*
This serves 3 adults or 2 adults and 2 children

*Time*
20 minutes preperation
40 minutes cooking time

*Method*
1) First, peel and cut the potatoes into pieces and place in a saucepan to boil them.

2) Whilst the potatoes are boiling, cut the carrot into small cubes and chop the onion.

3) Roughly 10 minutes after the potatoes have been brought to the boil, mix the vegetarian mince with some gravy (around half a pint) and the onion and carrot. Simmer this on the hob for 10 minutes.

4) After 10 minutes, the potatoes should now be soft. Mash the potatoes and pour the mince mix into an ovenproof dish. Cover the mix with the mashed potato and top with grated cheese.

5) Cook for 30-40 minutes at 200 degrees.

I really enjoy this dish and up until a few months ago I had never tried it. Being on the Weight Watchers programme I found that one serving only had around 5 points (without the cheese) so it was perfect for a meal.

I really like the taste of this. I find the quorn mince to work well with the potato, carrot and onion and find that the consistency I have provided is perfect to get just the right consistency of ingredients. I find that if you put more than half a pint of gravy in this dish it gets rather sloppy and wet, if you add less it is too dry for my liking. I like to serve this with cauliflower as its not often I get time to prepare a meal from scratch so I like to get all the possible nutrients at once!

For an added twist, add a few squirts of ketchup or barbeque sauce to the mince mix whilst its on the hob. This will make it more flavoursome as sometimes I find the mix on its own to be rather boring. Children like this added extra too!

My mum makes this and I love it its nice when we can all have a vegetarian meal instead of just me.

I cooked this today for our lunch, but put extra light Philadelphia in the mash instead of Cheddar as we are doing healthy!

I'd rather of had your one though!!!
