Advantages: its not a party without a sarnie

I thought I share my bread great grandma's bread roll/bun/cob recipe, it has worked every time for me, I have changed her recipe to use dried yeast instead of regular yeast as not that it makes much difference to the bread, but when I was pregnant the smell of yeast make me feel sick. I have to admit my grandma had to give me the quantities as my great grandmother could not read but she was an expert baker and make everything from just from eye. So this recipe the credit goes to them.
500g strong white bread flour plus a little extra
1 tea spoon of table salt
7g packet of fast action dried yeast
1 table spoon oil plus a little extra for greasing

300mls of warm water


Sieve the flour into a large bowl.
Add the salt to the flour.
Make a hole in the center of the flour.
Gradually add the warm water and oil, combining with the flour, if the mixture seems dry add a little more water.
Lightly flour a surface
Knead the dough for around five minutes or until the dough is smooth.
Divide the dough into how many rolls you want. I usually make 12.
Put the dough onto a very lightly oiled baking tray, making sure the rolls have enough room to double in size.
Put the dough in a warm place for it rises, it should double in size. Leave this for 1 hour.
Put into a preheat oven at 220oc for 10 -25 minutes.

These are best still warm with real butter.


On to sandwiches...

There's my top five

1. Mozzarella, sliced chorizo sausage with salsa on ciabatta toasted.
Why this - this is my favorite sandwich the flavours just work so well together. The mozzarella melts and goes so creamy, the chorizo adds a spicy meaty taste and the red oil infuses with the bread and the cheese, the salsa adds a tangy tomato and onion taste.

2. Christmas leftovers on sliced white bread -
I'm talking about turkey, stuffing, sausage meat, mashed up brussel sprouts, mashed potatoes, gravy and cranberry sauce. This is just because it's festive and the greed of wanting to taste everything at once. If you haven't tried this then do this Christmas, you don't know what you are missing.

3. Cheese and onion crisps on white buttered thick slice bread.
Sounds very childish but I still give in to my child like urge. Simply butter you bread, add a bag of cheese and onion crisps, put on the top slice and flatten the bread with your hands, also works well with cheesy wotsits!

4. Brie on granary bread with rocket and walnut oil dressing {open sandwich}
I had this when visiting London in an up market sandwich place and it was heaven I have tried to make this at home but it never ever tastes the same.

5. Cheese on toast with Branston pickle.
Okay so not exactly a sandwich but it's pure comfort food. Grill one side of the bread and turn over. Spread a large spoon full of the pickle over and put back under grill till it bubbles add slices of mature cheddar cheese over the pickle and turn the grill down and melt slowly till the cheese browns. Ahhhhh pure heaven.
