Advantages: Great for freezing.

A lot of people are now switching to sandwiches for lunch at work and it's a great way of saving money. My husband has been taking sandwiches to work for years and has always found he's eating more healthily and cheaply than if he bought the food from the canteen.

He loves curry and other spicy food, so he's found his own way of spicing up his lunch. Here's his favourite sandwich filling:

Bread: Wholemeal or granary breadcake spread with Flora margarine.

Meat filling: ham, beef, chicken or turkey.

Pickle: Patak's pickle, spread on generously. His favourite is Patak's Brinjal (aubergine), but Patak's Lime or Garlic pickles also work very well. If you're feeling really heroic try Patak's Chilli pickle!

To avoid the messing around of making sandwiches every morning before work, he buys a big pack of breadcakes and two or three different kinds of meat from Morrisons at the weekend. Then he makes up sandwiches for a whole week, packs them into individual bags and puts them into the freezer.

They're all ready to take to work, and are usually defrosted by lunchtime. Also on a warm day, the fact that they're frozen helps keep them fresh. He usually takes a banana and an apple or orange as well.

Another variation on this sandwich which he often eats at home, is to make the sandwich with sliced bread instead of breakcake and then toast it. Beef and Brinjal are the best for this. They are a magical combination!

In case you're wondering what I take to work for lunch, I don't! I work at home so just make my favourite cheddar and Branston sandwich any time I like!

This is probably because I live in a different part of the country - but what is a breadcake? I've never heard that expression before and I'm intrigued.....

Interesting recipe, you're right about people at work switching to sandwiches, canteen is a real rip off these days!
