Advantages: So So tasty
Disadvantages: Sometimes some brie falls out of the side - rememdy - eat quicker!
I made this today and I've never been so excited about a sandwich before in my life!
First and foremost let me just say, this is a toasted sandwich recipe, and can be made using ciabatta bread or good quality thick white bread...
Serves One
You will need
1/2 red bell pepper
4 length slices of brie (or more if you like)
One ciabatta/pannini or 2 slices good quality white bread
Slice into strips one half sweet bell pepper.
Heat a little oil in a small frying pan.
Fry off until soft to the touch.
Put on a plate to one side
Wipe clean frying pan.
Slice your bread if not already sliced
Place 2 slices of brie diagonally across one side of bread
Add on a layer of red pepper
Add on remaining brie
Top with remaining slice of bread
Place into your hot dry frying pan, and use a spatula to exert a small amount of pressure on the top of your sandwich.
After 3 minutes (or till your desired level of toasted) flip your sandwich, repeat process for 2 minutes on that side.
Alternatively and if you're lucky enough, use a pannini press!
Slice in 2 and enjoy whilst your brie is warm and gooey.
Perfect blend of sweet and creamy.
Also good as a mean meal, with some wedges, and a salad.
You can also add some thinkly sliced red onion to your pepper.
This is my big comfort food and it feels truly decandent on a cold windy and drizzly day, with a good book by a toasty fire....
