I love sandwiches, a great fast snack to make when you've not much time for anything else, and a handy item to put into a packed lunch for long train journeys. Just because somethings easy doesn't mean it has to be dull though - cheese, ham, tuna, and egg are all yummy, but as with anything, if you eat them too often, they get boring . I like to try new things in my sandwiches, often using up leftover bits from the fridge. Heres a few combinations (I hesitate to call them recipes due to the simplicity) I've greatly enjoyed .
A couple of these are wraps rather than traditional sandwiches, but still very yummy and just as convenient!
The PMT sandwich

I actually first discovered this as a baguette on sale in a cafe in Nottingham, and adopted it as one of my favourites.
Layer Pastrami, Mozzarella (the ball kind, not the grated stuff) and some sunblush tomatoes over a crispy baguette. Add a little lettuce, and enjoy! The pepperiness of the pastrami is balanced out by the creamy mozzarella and sweet tomatoes, and the crispy baguette soaks up the lovely herby oil sunblush tomato usually comes in .
Creamy Smoked Mackeral

Flake a smoked mackerel fillet into little pieces, and mix with a little mayonnaise and creamed cheese until its a thick pate like consistency . Tastes brilliant with brown bread, its also equally yummy on ryvita crackers.
Chicken and Tarragon
---------------------------
Tarragon has a lovely almost aniseedy quality that lends itself perfectly to chicken, which can otherwise be rather bland . Mix leftover (or ready cooked) chicken and mayonnaise together, and add in just a pinch of tarragon . It really jazzes up a pretty boring otherwsie sandwich .
Beef Mustard and Onion

Pretty traditional, but with a slight twist. Rather than raw onion and mustard just spread on the bread, thinly slice some good strong red onion , and mix together with mustard and margarine - bake on a low heat until the onions start to crisp, and cool . Spread the onion and mustard mixture onto bread, and layer with slices of beef. This for me always works better as a nice fat doorstep sandwich- crusty breads chewiness just goes wonderfully with the tangy onions and mustard.
Toasted pepper , chorizo, and halloumi cheese wraps

Get a couple of good thick slices of Halloumi cheese, and brush with oil on both sides. Sprinkle with a little paprika, and fry gently on both sides until it starts to turn golden. While doing this, toast tortilla wraps in the grill on a low heat to warp them. Add a couple of chargrilled peppers (you can buy these in ars)and a couple of chunks of chorize to the frying pan until warmed through . Spread the lot onto the warmed wrap, drizzle with lemon juice, and warm up and eat .
Toasties
------------
Toasties are easy - many people have a toasted sandwich maker at home, and if you do, you'll probably know just how addictive these are . They're yummy hot, and also pretty good cooled down . I'm sure most of you know how to make a toastie, so I'm not going to go into any lengthy explanations, just list some fun combos I like.
Cheese, Peanut Butter, and Jam - sweet, crunchy and cheesy all at the same time! Be careful though, the jam gets boiling hot!
Cheese and Baked Bean - comfort food at its finest!
Bacon and Egg - Ok, this one nees a little instruction - use cooked bacon, and layer over the bottom slich of bread in a toastie machine . Crack an egg, and quickly put the next slice of bread on, and close the machine . Yummy, but you have to get the timing right otherwise the egg seeps everywhere!
Bolognese/chilli and cheese - A great use of leftovers!
Cheese and sweet chilli sauce - a more grown up version of the cheese and jam sanwich - savoury and sweet with a mild kick!
